Jolie Pearl is the brainchild of veteran restaurateurs Eric Carnegie, Trent Wilson, and Rick Volland who teamed with local businessmen Derek Fitch, Scott Emonet and Dana Brown to bring Baton Rouge a truly unique oyster experience like never seen before. This team recognized the void and believes that The Capital City is ready for this one of a kind dining concept. Pushing the limits with an innovative menu and an ultra hip vibe, Jolie Pearl has combined concepts from oyster eateries across the country to create something truly unique for Baton Rouge. The void has now been filled with what is the pinnacle oyster experience in South Louisiana.
The name Jolie Pearl has dual meanings for its Founders. Not only is the building housing “The Pearl” named the Jolie Building but “Jolie” is also French for “beautiful”. With the beauty of our building and the beauty of the pearl in an oyster, there is no more fitting description for the oyster bar now known as Jolie Pearl.
